Classic Stuffed Peppers


Sweet bell peppers are packed with vitamins and high in antioxidants.

INGREDIENTS

  • 4 medium sweet bell peppers (colour of your choice)

  • 1 lb of lean ground beef, cooked

  • 1/2 medium onion, chopped

  • 3-4 garlic cloves, minced

  • 1 cup jasmine rice, cooked

  • 1/2 can of diced tomatoes (no salt added)

  • 1/2 tsp fresh ground sea salt

  • 1/4 tsp fresh ground black pepper

  • 3/4 cup medium cheddar cheese, shredded

PREPARATION

  1. Heat oven at 350°F.

  2. Mix all ingredients in a bowl.

  3. Remove the top of each pepper (from the stem) , discard the seeds and membranes. If needed, cut a thin slice at the bottom of each pepper (if they cannot stand up straight).

  4. Fill each pepper with beef mixture.

  5. Place peppers on a baking sheet in upright position and place the tops back on the peppers.

  6. Baked (uncover) for about 15-20 minutes, or until the peppers are tender then, remove tops and sprinkle with cheese.

  7. Broil at 400°F for an additional 8-10 minutes, or until the cheese reaches a golden brown colour.
