Tasty Greek-Style Omelette

Eggs are good for our brain’s health.


Eggs are a good source of several nutrients linked to our brain's health, including vitamins B6 and B12, folate and choline, an important micro nutrient that your body uses to create acetylcholine (neurotransmitter) that helps regulate mood and memory.


Eggs also contain omega-3 fatty acids which help maintain brain function and vision. These fatty acids are most common in oily fish and the amount of omega-3 in an enriched egg varies from around 100 to 500 mg per egg.

Preparation: Ready in less than 10 minutes

Yield: 1 serving


INGREDIENTS

  • 2 large eggs - slightly beaten

  • 1-2 Tbsp olive oil

  • Vine tomato - 2 medium slices

  • 1 Tbsp feta cheese - crumbled

  • 1 Tbsp sliced black olives (optional)

  • 1/2 green onion

  • 1-2 leaves fresh basil

  • Freshly grounded sea salt and black pepper (to taste)

PREPARATION

  1. Season beaten eggs with salt and pepper and set aside.

  2. Coarsely chop green onion, basil, tomato and feta cheese.

  3. Heat olive oil over medium heat - careful not to overheat!

  4. In a medium-size frying pan, add beaten eggs. After about 1-2 minutes, the edges will start to set, using a rubber spatula, gently drag the edges slightly towards the middle of the pan and tilt the pan (in a slow rotating motion) so that the uncooked eggs in the center of the pan fall around the bare edge (doing this will help it cook evenly) .

  5. Flip omelette when the edges start to set again until the bottom is slightly golden (but not brown).

  6. Add chopped ingredients on top of the omelette and cook for a few more minutes.

  7. Transfer to a serving plate while carefully folding the omelette in two.

  8. Serve immediately.
